Our cellar is in a half-buried building ( to take the best of ground proximity thermic isolation ) with photovoltaics panels on its roof.

It's made up of 9 inox thermo-regulated steel vats and a pneumatic press : a state-of-the-art technology to softly work with grapes coming after harvest, to control vinification's temperatures and so minimizing the provision of sulphur.

We have some 50 barrels "bordelaise-type", in which our "L'imprévu" and our most qualitative vintage, are softly maturing and refining, to make its tannic structure more supple, to refine and make more complex its aromatic line. They will most probably be ready to taste this autumn.
